Wanna know why Dickey's is the worlds greatest barbecue?

Ribs are the backbone to the barbecue business and Dickey’s understands that the perfect ribs are not necessarily a science, but an art form.

How do we get perfect, mouthwatering fall-off-the-bone ribs? That’s the secret we are sharing today.
   
Dickey’s always starts with a great rib rub, like Dickey’s Signature Rib Rub which includes ground cumin, salt, garlic a sugar and maybe a few secret ingredients. After slathering the ribs with the rub, we place the ribs in the smoker bone-side down. This allows the smoke to channel under the ribs and achieve an overall smoky, savory flavor.

We smoke our succulent ribs at a temperature between 270 and 295 degrees F and we smoke them for 3 to 3 ½ hours.

To check the doneness, we perform the “break test” by grabbing the rib rack with a pair of tongs making sure they immediately break. This means they are perfect. At Dickey’s, we make sure our ribs literally fall-off-the-bone and melt in your mouth -- nothing else will do!

Have fun and don’t worry about getting a little messy -- that’s just part of making great barbecue.

National Barbecue Month

Did you know about National Barbecue Month?  
The technique of cooking over hardwood coals or a low fire, or with smoke and indirect heat from hardwood, at a low temperature (about the boiling point of water) exists in a great many different cultures, and has from time immemorial: Europeans and Africans were both familiar with it before they arrived in the New World and found the native Indians doing it.
The word barbecue came into English only some five hundred years ago. In the first decades of the 1500s Spanish explorers in the Caribbean found the locals using frameworks of sticks to support meat over fires. They did this either to slow-cook it or to cure and preserve it. Both on the island of Hispaniola (modern-day Haiti and the Dominican Republic) and on the northern coast of South America this apparatus was called something that the Spanish heard as barbacoa.

Barbecue pits date back to 25,000 B.C., and starting around 1600 B.C., the ancient Greeks were hosting open-pit barbecues. Writing in the eighth century B.C., the Greek epic poet Homer describes an early barbecue: Among guests of honor were Ajax and Odysseus, and the pit master was Achilles.

In the 1600s, shooting firearms at a barbecue was declared unlawful in Virginia. By 1769, barbecue was an American social and culinary institution. An entry in George Washington's diary that year states: "Went up to Alexandria to a barbicue."

Barbecue flourished first in the South, where the domesticated pig was and still is the meat of choice. Barbecue followed the herds of cattle west to Texas, where beef was and still is synonymous with barbecue. And in the Midwest, Southern and Western barbecue traditions crossed and mingled.

During the 19th and early 20th centuries regional barbecue developed into the well-defined varieties, styles and sauces that have made America the barbecue capital of the world. It was the food of the poor--slaves, cowhands, rural country folk.
It was the alfresco feast of the rich--who hosted lavish barbecue parties. And it was the crowd-pleasing bash of politicians--from Boss Tweed to Lyndon Baines Johnson, Jimmy Carter to President Bush. In the 20th century, the rediscovery of regional American cuisine has refueled our interest in barbecue.

Dickey's Chicken Zoodle soup

Warm up enjoying this simple, easy recipe for 
Chicken Zoodle Soup

4 cups of chicken broth
1 cup shredded chicken
1 Dickey's chicken breast - chopped
1/2 cup diced carrot
1/2 cup diced celery1 Julienned zucchini
2 springs of thyme
1 bay leaf
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Add the olive oil and sauté the celery and carrot for two minutes.
Add the chicken, chicken broth, thyme, bay leaf, salt and pepper and bring to a boil. Add the zucchini noodles and simmer for four minutes until noodles are cooked.
Serve and Enjoy!

Dickey's Bbq Pulled Pork & Penne Skillet

Want a great meal?  Give this recipe a try we serve only the best high quality meats @ Dickey's Barbecue, Cedar City, Utah

Barbecue Pulled Pork and Penne Skillet
8 Servings Prep/Total Time: 25 min.

Ingredients
1 package (16 ounces) penne pasta
1 cup chopped sweet red pepper
3/4 cup chopped onion
1 tablespoon butter
1 tablespoon Olive Oil
3 garlic cloves, minced
(18 ounces) refrigerated Dickey's barbecued pulled pork
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
1/2 cup beef broth
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
1-1/4 cups shredded cheddar cheese
1/4 cup chopped green onions

Directions
Cook pasta according to package directions. Meanwhile, in a large
skillet, saute red pepper and onion in butter and oil until tender.
Add garlic; saute 1 minute longer. Stir in the pork, tomatoes,
broth, cumin, pepper and salt; heat through.
Drain pasta. Add pasta and cheese to pork mixture SERVE. . . Enjoy!

Southern Utah Definitely Unique!

Anglo settlement in Southwestern Utah was accomplished by Mormon pioneers drawn to a long growing season and warmer climate, in contrast to the cold and snow of northern Utah. Mormon leader Brigham Young maintained a "winter home" in the city of St. George.
These days, retirees enjoy the area, along with ranchers, and those engaged in the tourist trade. Cedar City and St. George are hubs for entertainment, dining, and shopping.
Cedar City proudly hosts the Tony Award®-winning Utah Shakespeare Festival, located on the campus of Southern Utah University. Travelers interested in Utah's heritage will enjoy a stop at Frontier Homestead State Park and Museum.
Cedar City has long billed itself as "gateway to Utah's National Parks." One excellent itinerary is to follow the loop from Cedar City, southeast to Zion National Park, then north to Bryce Canyon National Park and back through Cedar Breaks National Monument to Cedar City. It's not a trip that you should schedule for one day, however: two is doable, three is ideal, and four is a bonus.

You "knead" to try our new artisanal bread, it's an original recipe!

We all know Dickey’s offers mouthwatering barbecue that satisfies any hardcore carnivore, but did you know that Dickey’s now also makes all of their bread too?
Bread is one of the oldest known recipes to man. It has been around for several millennia—approximately 12,000!

Bread started off as what we would call a flatbread, similar to that of a tortilla. It was simply ground grains and water mashed together and then baked. It is believed that the cultivation of wheat and other grains was one the driving forces in the transition from nomadic people to domesticated, stationary people.  This led to bread becoming a staple in human diets.

In September, Dickey’s across the country will be rolling out this new homemade recipe for all their rolls, buns and hoagie rolls. The new artisanal bread is an original recipe designed by Dickey’s Chef Jeff Forrester.

“Our customers have always loved our rolls – they have a touch of sweetness that complements our barbecue perfectly,” said Forrester. “Now, all of our buns and hoagie rolls will have that same southern fresh bread recipe that I know our customers are going to love.”

Mingle with the Tour of Utah riders on the top of the world at 10,000 ft. in Brian Head. Beginning at 9:30 AM Brian Head Resort’s Scenic Lift Ride will be open for sightseeing and Mountain Biking. THE ROUTE:
Hill climbs are awesome! If you’re a die hard fan you will want to situate yourself along the route of the tough climbs. Dress yourself in your favorite team colors, paint your face, bring a poster, banner, flag, etc. and cheer on the riders. The route will leave Brian Head and follow Utah’s Patchwork Parkway - Hwy 143 through parts of Cedar Breaks National Monument. Turn east and stay on Hwy 143 leading to Panquitch. The route continues south on Hwy 89, turns west at Todd’s Junction onto SR-14 into Cedar City.

Tour of Utah riders will do three fast laps around the university and finish in Historic Downtown near Wells Fargo.

Come support the Frontier Homestead State Park

 Now called Frontier Homestead State Park as of 2009, formerly Iron Mission State Park.
Lots of pioneer information on how Cedar and area started in late 1800's. Very few hands-on stuff for young kids.  The first Tuesday of every month is Free.  There is Preschool story time - a short story about what pioneer kids did that time of year and an activity for the kids.  This might be most accurately described as a museum.
