Dickey's Chicken Enchilada

Dickey's Chicken Enchilada Recipe 

10 small soft flour tortillas (you can use corn but I like flour with chicken)
3 tablespoons flour
2 cups chicken broth
1 cup sour cream
2 1/2 cups Dickey's Smoked Chicken Breast shredded
3 cups Monterey Jack cheese – shredded
3 tablespoons butter
4oz can diced green chillies

Directions:
Preheat oven to 350 degrees
Combine Dickeys shredded chicken and 1 cup of cheese
Fill tortillas with the mixture above and roll each one then place in a greased 9×13 pan
Melt butter in a pan over medium heat
Stir flour into butter and whisk for 1 minute over heat.
Add broth and whisk together. Cook over heat until it’s thick and bubbles up
Take off heat and add in sour cream and chilies. (be careful it’s not too hot or the sour cream will curdle)
Pour mixture over enchiladas and add remaining cheese to top.
Bake in oven for 15-20 minutes then you will want to broil for 3 minutes to brown the cheese. Let rest 10 minutes before serving.

July Jamboree Cedar City Utah

It's that time again ~ The 17th annual July Jamboree Cruise-In is presented by Tink's Superior Auto Parts and the Cedar City Rotary Club on July 12, 2014.

Located at Cedar City's Historic Downtown Main Street, it will feature live bands, vendors of all kinds, including food and a Great Car Show. *** Look for the BiG Yellow van during the event and see how you can get a FREE Big Barbecue Sandwich from Dickey's Barbecue Pit. ***

Car Pre-Registration will be held Friday, July 11th from 5:30-8pm at the Crystal Inn where you can enjoy a BBQ, cash bar, and live music.

Saturday morning, July 12th at 8:30am, a full breakfast buffet will be served at the Garden House. The Rod Run is planned after breakfast and then the Show and Shine on Downtown Main Street that late afternoon and evening.

T-shirts, goodie bags and awards will be presented during the evening. The car entry fee is $30.
The event is free to the public.

Summer Games Begin in Cedar City 2014

Summer Games have begin, come out and join the excitement happening now in Cedar City.  Since 1986, aspiring athletes from throughout Utah have descended upon Cedar City to challenge themselves in 40 different sports in the Utah Summer Games.  Slated for the second and third week of June in Cedar City, Utah, the events are hosted by Southern Utah University, Iron County School District and the Cedar City Parks and Recreation Department.Providing an "Olympic" style experience for Utah athletes of all ages and skill levels, the highlight of the Summer Games is the Opening Ceremonies, complete with an athletes march, torch run, grand fireworks and entertainment--all in the Greek-themed Eccles Coliseum.
Almost 10,000 athletes participate. Athletes must be Utah residents to compete. Soccer is the largest of all Utah Summer Games sports with 3,300 athletes, followed by basketball (900), track & field (500) and gymnastics (250). There is the popular triathlon, fast pitch softball, mountain biking, water polo, power tumbling, 5K and 10K races and many more sports.

Dickey's Chicken Zoodle soup

Warm up enjoying this simple, easy recipe for 
Chicken Zoodle Soup

4 cups of chicken broth
1 cup shredded chicken
1 Dickey's chicken breast - chopped
1/2 cup diced carrot
1/2 cup diced celery1 Julienned zucchini
2 springs of thyme
1 bay leaf
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Add the olive oil and sauté the celery and carrot for two minutes.
Add the chicken, chicken broth, thyme, bay leaf, salt and pepper and bring to a boil. Add the zucchini noodles and simmer for four minutes until noodles are cooked.
Serve and Enjoy!

Facts about Cedar City, Utah

Cedar City Population: 29,213 / Iron County Population: 48,494  US Census Bureau 2011 Estimate.Elevation: 5,840 feet  located on the edge of the Colorado Plateau and the Great Basin.

Ancient home to the Fremont people and then to their descendants, the Southern Paiutes. Cedar Valley is part of the Dominguez-Escalante route established in 1776. The city was settled by Mormon pioneers in 1851 who were sent to build an iron works. The first iron produced west of the Mississippi was in Cedar City.

Home to Southern Utah University, which was founded in 1897. SUU has more than 8,000 students and is known for personalized education and academic excellence. SUU is a member of the Big Sky Conference.

Since the arrival of the Union Pacific Railroad in 1923, Cedar City has been the gateway to the parks, with easy access to Cedar Breaks National Monument, Bryce Canyon National Park, Zion National Park, Kolob Canyons, and the north rim of the Grand Canyon.

Cedar City is served by Cedar City Regional Airport with one of Utah’s largest runways. Regional jet service is provided by Skywest Airlines.

Cedar City has a diverse economy, balanced by education, manufacturing, mining, agriculture and retail. Major employers include Southern Utah University, Intermountain Healthcare, Convergys, Genpak, Leavitt Group Enterprises, Smead Manufacturing, Metalcraft Technologies/Syberjet and American Pacific Corp.

Cedar City has a young, educated workforce. More than 90% of residents over 25 have a high school diploma. More than 30% have a bachelor’s degree or higher. More than 28% of the population is younger than 18, and just 8.6% are over 65.

Cedar City is well known for its strong sense of community, with the City, the University, and local business working together to achieve common goals.
