Ribs are the backbone

Ribs are the backbone to the barbecue business and Dickey’s understands that the perfect ribs are not necessarily a science, but an art form.

How do we get perfect, mouthwatering fall-off-the-bone ribs? That’s the secret I’m sharing today.

Dickey’s always starts with a great rib rub, like Dickey’s Signature Rib Rub which includes ground cumin, salt, garlic a sugar and maybe a few secret ingredients. After slathering the ribs with the rub, we place the ribs in the smoker bone-side down. This allows the smoke to channel under the ribs and achieve an overall smoky, savory flavor.

We smoke our succulent ribs at a temperature between 270 and 295 degrees F and we smoke them for 3 to 3 ½ hours.
To check the doneness, we perform the “break test” by grabbing the rib rack with a pair of tongs making sure they immediately break. This means they are perfect. At Dickey’s, we make sure our ribs literally fall-off-the-bone and melt in your mouth -- nothing else will do!

Southern Utah Definitely Unique!

Anglo settlement in Southwestern Utah was accomplished by Mormon pioneers drawn to a long growing season and warmer climate, in contrast to the cold and snow of northern Utah. Mormon leader Brigham Young maintained a "winter home" in the city of St. George.
These days, retirees enjoy the area, along with ranchers, and those engaged in the tourist trade. Cedar City and St. George are hubs for entertainment, dining, and shopping.
Cedar City proudly hosts the Tony Award®-winning Utah Shakespeare Festival, located on the campus of Southern Utah University. Travelers interested in Utah's heritage will enjoy a stop at Frontier Homestead State Park and Museum.
Cedar City has long billed itself as "gateway to Utah's National Parks." One excellent itinerary is to follow the loop from Cedar City, southeast to Zion National Park, then north to Bryce Canyon National Park and back through Cedar Breaks National Monument to Cedar City. It's not a trip that you should schedule for one day, however: two is doable, three is ideal, and four is a bonus.

Customers love our rolls

(DALLAS, TX) In September, Dickey’s Barbecue Restaurants across the country will be literally rolling out new dough.  The new artisanal breads are modeled after Dickey’s signature rolls with a touch of Southern sweetness and fresh, simple ingredients. New bread items will include handcrafted buns, hoagies and dinner rolls baked daily in all restaurants.

 “Customers love our rolls because they have a touch of sweetness that pairs perfectly with our hot pit-smoked barbecue and tangy barbecue sauce,” said Jeff Forrester, Vice President and Executive Chef for Dickey’s Barbecue Restaurants, Inc. “Now, all of our buns and hoagie rolls will have that same southern fresh bread recipe that I know our customers are going to love.”

The homemade bread products are part of Dickey’s menu innovations that now include the sale of whole meat options including slow-smoked briskets, pork butts, barbecue honey hams, smoked turkeys and full racks of ribs. With the new bread recipe, Dickey’s continues its commitment to fresh, wholesome ingredients and authentic home-style family meals.

“We are really shaking things with our menu --the new bread just kicks off the hot new items we have planned,” said Forrester. “Dickey’s new bread has that authentic, right out of the oven flavor -- you’ll think your grandma made them.”

National Moth Week: Go crazy for moths! Join scientist Jackie Grant from the Garth and Jerri Frehner Museum of Natural History to learn how to capture and identify night-flying insects at Moth Madness 2013 from 7:00 pm to 10:30 pm at Cedar Canyon Nature Park (Southwest Wildlife Foundation, Coal Creek walking Trail, 1.5 miles east of Main Street on Highway 14, Cedar City). Participants will learn about moth biology and how moths are collected with light traps. All participants should bring sturdy shoes, a flashlight, and a camera if they want to take pictures of the insects that come to the trap. Children are welcome, but parents should be aware that the moths won’t start coming to the traps until the sun sets.

Junior League Utah State Champions

The Junior League All-Stars 14 year old kids will represent the state of Utah at the Little League Western Regional Baseball Tournament held in Vancouver, Washington starting July 30.
