Smoked ON-SITE Daily @ Dickey's Barbecue

Every Dickey's location smokes all of their meats ON-SITE DAILY at the restaurant the same way it was done in 1941. Dickey's serves up beef brisket, pulled pork, ham, polish sausage, turkey breast and chicken, with an extensive array of home-style sides from jalapeño beans to macaroni and cheese. Buttery rolls are served with every meal. 
To keep the meat fresh, tender and juicy throughout the day it is wrapped in a plastic covering and kept in our warmer to insure it's freshness until you are ready to be served.  All of our meats are seasoned and slow smoked in hickory wood burning pits, ON-SITE DAILY, at each of our restaurants.
We source only the highest quality meats in the country and if it's not perfect, we don't serve it.

Dickey's Chicken Fajitas

Dickey's Chicken Fajitas

1 cup packed cilantro leaves, plus extra for serving
1/4 cup lime juice, about 2 limes
1/4 cup low-sodium chicken broth
3 scallions, cut into 1-inch pieces
2 cloves garlic
1 jalapeno, seeded if desired
1 tablespoon honey
 salt
1 1/2-pounds Dickey's chicken breasts
1 red onion, sliced into 1/2-inch thick rounds
2 orange and/or yellow bell peppers, quartered, seeds removed
1 ripe avocado, halved, seeded and peeled
1 1/2 teaspoons olive oil
1/8 teaspoon ground cumin
1/8 teaspoon ground coriander
1/4 cup fat-free Greek Yogurt
12 corn tortillas

Put the cilantro, lime juice, broth, scallions, garlic, jalapeno, honey, and salt in a blender, puree until smooth. Reserve 2 tablespoons; do not wash out the blender.

Put cooked Dickey's chicken breasts in a medium bowl and the peppers and onions in another. Divide the remaining cilantro puree evenly between the chicken and the peppers and onions. Toss well to coat the chicken and vegetables and let stand, at room temperature, for 30 minutes.

Add the avocado, 1/2 cup water, and the reserved 2 tablespoons cilantro sauce to the blender. Puree until smooth and season with salt. Set aside.

Heat the oil in a small skillet set over medium heat until hot. Add the cumin and coriander and continue to cook until fragrant, about 30 seconds to 1 minute. Pour the spices over the yogurt and set aside for the flavors to blend. Stir before serving.

Preheat a grill for medium-high/direct heat cooking. Oil the grill grates. Grill the chicken ONLY to warm it up set aside, then grill vegetables, turning, until the vegetables are tender and the chicken reaches an internal temperature of 160 degrees F, about 5 to 8 minutes for the vegetables. Place the tortillas on the grill until just warmed through, about 30 seconds.

To assemble the fajitas: slice the onions and peppers into thin strips and then slice the chicken. Place some peppers, onions, chicken and cilantro in a tortilla topped with the spiced yogurt and the avocado sauce.
This would even be a great dinner with pulled pork.  Try both.

Zuppa Toscana Soup with Dickey's Sausage

Warm up today with this heavenly soup...
Zuppa Toscana Soup

1 pound Dickey's Polish or Spicy Cheddar Cheese Sausage
1/2 pound bacon, chopped
7 cups water
3 chicken flavored bouillon cubes
2 large russet potatoes, scrubbed clean and cubed
2 cloves garlic, chopped
1 medium onion, chopped
2 cups chopped kale
1 cup heavy whipping cream
salt and pepper, to taste

Directions
Using a large soup pot over medium-high heat, warm sausage and set aside.
In the same pot over medium-high heat, brown bacon; remove and set aside. Leave two tablespoons of rendered bacon fat in the skillet.
Saute the potatoes, onion, and garlic in the rendered bacon fat over medium or low-medium heat. Saute until the onion begins to be translucent and the potatoes have are still a little firm, but are beginning to soften.
Add the sausage, bacon, 7 cups water, and 3 chicken bouillon cubes to the pot.
Simmer until the potatoes are tender. Enjoy!

Dickey's Chicken Zoodle soup

Warm up enjoying this simple, easy recipe for 
Chicken Zoodle Soup

4 cups of chicken broth
1 cup shredded chicken
1 Dickey's chicken breast - chopped
1/2 cup diced carrot
1/2 cup diced celery1 Julienned zucchini
2 springs of thyme
1 bay leaf
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Add the olive oil and sauté the celery and carrot for two minutes.
Add the chicken, chicken broth, thyme, bay leaf, salt and pepper and bring to a boil. Add the zucchini noodles and simmer for four minutes until noodles are cooked.
Serve and Enjoy!

Facts about Cedar City, Utah

Cedar City Population: 29,213 / Iron County Population: 48,494  US Census Bureau 2011 Estimate.Elevation: 5,840 feet  located on the edge of the Colorado Plateau and the Great Basin.

Ancient home to the Fremont people and then to their descendants, the Southern Paiutes. Cedar Valley is part of the Dominguez-Escalante route established in 1776. The city was settled by Mormon pioneers in 1851 who were sent to build an iron works. The first iron produced west of the Mississippi was in Cedar City.

Home to Southern Utah University, which was founded in 1897. SUU has more than 8,000 students and is known for personalized education and academic excellence. SUU is a member of the Big Sky Conference.

Since the arrival of the Union Pacific Railroad in 1923, Cedar City has been the gateway to the parks, with easy access to Cedar Breaks National Monument, Bryce Canyon National Park, Zion National Park, Kolob Canyons, and the north rim of the Grand Canyon.

Cedar City is served by Cedar City Regional Airport with one of Utah’s largest runways. Regional jet service is provided by Skywest Airlines.

Cedar City has a diverse economy, balanced by education, manufacturing, mining, agriculture and retail. Major employers include Southern Utah University, Intermountain Healthcare, Convergys, Genpak, Leavitt Group Enterprises, Smead Manufacturing, Metalcraft Technologies/Syberjet and American Pacific Corp.

Shakespeanean Festival

CEDAR CITY, UT – Is known for many great things and now it will be known for having GREAT Barbecue.  

Four Shakespearean classics, two hit musicals, an American stage icon about justice, and a regional premier of a new play are all scheduled as part of the 2013 season at the Utah Shakespeare Festival.

The Festival’s 2013 season, its 52nd, will run from June 24 to October 19. Ticket Office windows at the Festival, by calling 800-PLAYTIX, or by visiting us online at www.bard.org.

The Festival will present in the world-famous outdoor Adams Shakespearean Theatre the first in that history cycle, King John. Also in the Adams Theatre will be Shakespeare’s epic masterpiece The Tempest and the frothy romance Love’s Labour's Lost. These three plays will run from June 24 to August 31.

“In addition to featuring works by the Bard, we will return to producing two musicals in the season,” Ivers commented. Featured in the Randall L. Jones Theatre from June 24 to August 31 will be Cole Porter’s high energy musical Anything Goes. During the late season, September 18 to October 19, guests can enjoy favorite songs from the 50s and 60s in Roger Bean’s The Marvelous Wonderettes.

Also in the Randall L. Jones Theatre will be the American theatre classic Twelve Angry Men from June 24 to August 31 and the second in Shakespeare’s history cycle, Richard II, from September 18 to October 19.

The final, and perhaps most exciting, 2013 production will be a regional premiere of the winner of five 2012 Tony Awards, Peter and the Starcatcher by Rick Elice based on the novel by Dave Barry and Ridley Pearson. Peter and the Starcatcher promises to be a thrilling, imaginative, theatrical experience about Peter Pan, the boy who never grew, and all the memorable characters he encounters on his journey to Neverland. Fun and inviting for the whole family; this show is not to be missed. Peter and the Starcatcher will run all season from June 24 to October 19, in the Randall L. Jones Theatre.

“Each play represents our continued commitment to explore master works of the theatre while entertaining and engaging our audiences in new and thrilling ways,” concluded Artistic Director Brian Vaughn.

“It is a season of limitless possibilities.”
